    Crab Spring Rolls

    ingredients

    ingredients

    • 15 chicken breasts
    • 4 yellow lemons

    250 g medium Asian noodles
    2 chicken breasts

    Preparation

    Melt the onion in a little oil in a large pan. Add pepper and chili. Let brown a few minutes, then add the chicken cut into small pieces. Add the carrots, cut into small cubes. When it is almost cooked, add the spices and prolong the cooking for 5 minutes. Add the noodles (noodles = Chinese noodles) previously cooked for 4 minutes in boiling water, and fry on high heat.     Fried Wontons

    ingredients

    For garnish:
    150 g medium shrimp, shelled, deveined, and cut into small pieces
    120 g coarsely ground beef
    1 shallot, finely chopped
    1/2 teaspoon cornstarch
    1/4 teaspoon of sugar
    1 little ginger
    A little salt
    1 pinch of black or white pepper
    The wontons:
    wonton dough (form about 48 squares) (in Asian grocery stores) *
    peanut or rapeseed oil for frying
    200 ml of our sweet and sour sauce

    To prepare the stuffing of the wontons:
    Mix the shrimp, beef, shallot, cornstarch, sugar, salt and pepper in a bowl.
    Cover and let stand for 30 minutes before using, otherwise, you can refrigerate a day in advance.
    Before assembling the wontons, line a baking sheet with parchment paper and sprinkle lightly with cornstarch.
    Fill each wonton dough square with about 1 teaspoon of stuffing, gather the corners of the dough square to form triangles or flower buds.
    Place the finished wontons on the prepared baking sheet.
    When they are all done, lightly cover with a kitchen towel to prevent them from drying out.
    Wontons can also be covered with plastic wrap and refrigerated for several hours; then let them sit at room temperature before frying.
    Place a rack on a sheet of baking paper next to the stove.
    Pour an oil bath in a deep pan and heat to 180 ° C.
    Slide the wontons into the hot oil and fry for about 1 minute on each side, or until they turn golden.
    Use a skimmer to take the wontons out and drain them.
